‘The best kind of horse for hawking is a short-legged, steady little horse that can jump a bit – short-legged to enable the rider to get on and off quickly, and steady enough to stand quiet while the falconer takes up the hawk. To assist this the saddle should have a holster carrying a long weight like a clock weight. This, fastened by a cord from the pommel through the ring of the bit, may then be thrown on the ground to tether the horse when the falconer dismounts.’

In English rook-hawking with falcons, when considerable distances may be covered while following a flight:

‘A good horse that can gallop, but that is quiet enough to carry a hawk, is indispensable.... We have always found thoroughbred horses (especially young ones) more fearless and better suited to this work than others. A good deal may be done with a very nervous horse by keeping him in a loose box with three or four live pigeons till he is thoroughly used to them...’ – 189247.

In hunting with the goshawk, involving shorter flights, the horse was more simply a mode of transport to, from and in the field.

HOT (obs.) Of meat, warm or freshly-killed:

‘... Fede hir with an olde hote colver [culver, pigeon or dove]....’ – 14865.

This writer’s phrase ‘hote of it selfe’ appears to mean rich, very nourishing. Hot (hote or whote), meaning rich, is met with in other old texts and has also been used to describe meat which has been re-warmed. Writing in the 13th century, Emperor Frederick35 advises that if meat has cooled it should be immersed in fresh warm water and fed to the hawk when it has reached body temperature. A hot gorge (obs.) is a meal of freshly-killed food given to or taken by a hawk. Cool (obs.) usually means bland, less rich, not rich.
